Baguette with smoked tofu

Ingredients

  • 1 pack of Joya Organic Tofu Smoked, thinly sliced
  • 6 tbsp wine
  • 4 tbsp soy sauce
  • 2 tbsp wine vinegar
  • 3 tbsp olive oil
  • 3 cloves of garlic, finely chopped
  • 1 tsp thyme
  • 2 bay leaves
  • 5 peppercorns
  • 1 baguette
  • 4 tsp mustard
  • 8 lettuce leaves
  • 2 tomatoes, thinly sliced
  • 1 cucumber, thinly sliced
  • 1 small red onion, thin rings

  1. Mix the wine, soy sauce, wine vinegar, 2 tbsp olive oil, 200 ml water, garlic, thyme, bay leaves and pepper and simmer for 3 minutes. Pour over the smoked tofu, let it cool, refrigerate and leave to marinate for at least 1 hour.
  2. Drain the tofu. Heat 1 tbsp olive oil in a non-stick frying pan, lay the tofu slices side by side in the pan, fry on both sides for approx. 2 minutes.
  3. Cut the baguette into two pieces and slice in half lengthwise. Spread some mustard on the bread and fill with salad, tomatoes, cucumbers, tofu and onions. Put a little “tartar” tofu dip on top.
