Chocolate chip oatmeal cookies

Ingredients for about 20 cookies

  • 300 g rolled oats
  • 165 g flour
  • 1/2 ts of each: baking powder, baking soda
  • 1 pinch of each: salt, cinnamon
  • 150 g vegetable margarine or butter, softened
  • 75 g rice syrup or cane sugar
  • 1 egg
  • 200 ml Joya organic oats drink
  • 100 g chocolate chips

These oatmeal cookies are more nutritious than the ready-made you’ll find. They are perfect when craving something sweet and are very easy to prepare.

  1. Preheat the oven to 175 °C. Mix the dry ingredients in a bowl: oats, flour, baking powder, baking soda, salt and cinnamon. Set aside.
  2. Beat with a mixer or food processor margarine and rice syrup for 1 minute. Beat the egg with the Joya organic oats drink. Add the mixed egg and oats drink mixture to the margarine/rice syrup . Mix until all the ingredients are well blended. Stir this mixture through the dry ingredients. Add the chocolate chips.
  3. Form small balls with an ice cream scoop and place on a baking sheet lined with baking paper. Press the balls flat. Bake in the oven for 12 to 15 minutes.
  4. Let the cookies cool slightly on the baking tray. Take them with a spatula from the tray and let them cool completely on a wire rack.

Tipp: If you prefer vegan cookies, just replace the egg with half a mashed banana or 80g of apple sauce.
