These oatmeal cookies are more nutritious than the ready-made you’ll find. They are perfect when craving something sweet and are very easy to prepare.
- Preheat the oven to 175 °C. Mix the dry ingredients in a bowl: oats, flour, baking powder, baking soda, salt and cinnamon. Set aside.
- Beat with a mixer or food processor margarine and rice syrup for 1 minute. Beat the egg with the Joya organic oats drink. Add the mixed egg and oats drink mixture to the margarine/rice syrup . Mix until all the ingredients are well blended. Stir this mixture through the dry ingredients. Add the chocolate chips.
- Form small balls with an ice cream scoop and place on a baking sheet lined with baking paper. Press the balls flat. Bake in the oven for 12 to 15 minutes.
- Let the cookies cool slightly on the baking tray. Take them with a spatula from the tray and let them cool completely on a wire rack.
Tipp: If you prefer vegan cookies, just replace the egg with half a mashed banana or 80g of apple sauce.
