1. Heat the oil in a shallow pan. Fry the onions in the oil until glazed and soft. Mix in 2 tablespoons of parsley and sauté briefly. Sprinkle in the flour and stir fry briefly.
2. Mix in the mushrooms, season with salt and pepper and stir fry for 5 minutes. Stir in the Joya Organic Soy Cooking Cream.
3. Simmer the mushrooms for 3 more minutes, season with salt and pepper. Sprinkle the remaining parsley over the top.
Perfect with bread dumplings.
