Tofu and herb spread

Ingrediens

  • 200 g Joya Organic Tofu Natural
  • 2 tbsp olive oil
  • 2 tbsp flaked almonds
  • 3 tbsp chopped onion
  • 1 bunch of parsley, chopped
  • 1/2 bunch of basil, chopped
  • 1/4 tsp chopped organic lemon zest
  • 1 tbsp lemon juice
  • 1 pinch of nutmeg
  • 1 pinch of salt
  • 1 pinch of pepper

  1. Pat the Joya Organic Tofu Natural dry and cut into small cubes.
  2. Heat 1 tsp oil in a non-stick frying pan, salt the flaked almonds and fry them briefly in the oil.
  3. Blend the tofu with the roasted flaked almonds, onions, the remaining olive oil, parsley, basil, lemon zest, lemon juice, nutmeg, salt and pepper into a creamy spread using a suitable mixer/cutter or a hand blender.

Tip: The tofu and herb spread is perfect on fresh bread and can be prettily garnished with basil and cherry tomatoes.
