Whole-grain bread with Chia seeds

Ingredients

  • 500 g wheat flour
  • 500 g rye flour
  • 800 ml Joya Organic Oats Drink
  • 1 tbsp salt
  • ½ tbsp bread spice (fennel, caraway, anise)
  • 2 tbsp each of sesame, poppy and Chia seeds, rolled oats and flax seed meal
  • 1 cube fresh yeast

  1. Add the fresh yeast to the lukewarm Oats Drink and stir until it has dissolved.
  2. Put the flour into a large bowl and add the Oats Drink mixture. Then add salt and spices and finish off by kneading in sesame, poppy and Chia seeds, rolled oats and flax seed meal.
  3. Knead the dough thoroughly and place in a lidded bowl. There should be enough space, so that the dough can rise. Close the bowl and put it in a warm water bath for about 1 hour to allow the dough to rise.
  4. Once the dough has nearly doubled in size, remove it and knead it into the desired shape. Cover with a tea towel and leave to rise in a warm place for another 30 minutes. In the meantime, preheat the oven to 200 °C.
  5. Place on a baking sheet lined with baking paper, sprinkle with sesame seeds and bake at 200 °C for about 30 minutes.
